Beef Birria Tacos

Prep time: 6-8 minutes

Birria tacos are baaaaack! Have you been pining for this taco-fied take on the classic Mexican stew? Dreaming of dunking into that good, good birria jus? ‘Cus we sure as heck have. That rich, savory, chili-spiked braising liquid is the secret to juicy, dripping-with-goodness tacos and we wouldn’t want it any other way. Alright Fam, fire up your stove, it’s taco time!

In your bag

  • Slowly braised shredded beef & birria jus
  • Saffron rice & beans
  • Cotija, salsa verde, pickled red onions & lime
  • 6 corn tortillas
  • Fresh zucchini with lime and Tajin

At home

  • 1 microwave-safe bowl & 1 microwave-safe plate
  • Saute pan
  • Tongs
  • Small bowl or ramekin

The Beef & Birria Jus

  1. Add the beef & birria jus to a microwave-safe bowl and microwave until warmed through. Alternatively, add the beef & birria jus to a saucepan and heat over medium for 4-5 minutes or until warmed through.

The Rice & Beans

  1. Place the rice & beans in a microwave-safe bowl. Add a splash of water and cover with a damp paper towel. Heat until warmed to your liking. 

The Tortillas and Cotija

  1. Heat a pan over medium and lay the tortillas on there for ~10 seconds to get them soft and pliable. 
  2. Using tongs, flip the tortillas over and sprinkle some cotija on each. Leave them in the pan for 10 more seconds, until cheese is melty Slide onto a plate.

The Zucchini

  1. Heat your saute pan over medium. Once hot, add a drizzle of olive oil and your zucchini. Season with S&P. Cook, stirring frequently, until the zucchini is tender and the edges begin to brown. Remove from the heat.
  2. Slice your lime into four wedges and squeeze over the zucchini. Sprinkle Tajin to taste (start slow, it has a kick!) and toss to combine.

Assembly!

  1. Use your tongs to add a portion of the warmed beef to the cheese side of each tortilla. Add any extra jus to your small ramekin or bowl for dipping!
  2. Top each taco with salsa verde, pickled red onion, and a squeeze of lime.
