Beef Bourguignon

Beef Bourguignon

Prep time: 10 minutes stovetop or 2-3 minutes microwave

The “Bourguignon” part of the dish’s name refers to its origins in the region of France called Burgundy. Our WECO-ized version has the essentials: Beef and red wine. We used the red wine to deglaze our pan, which helps collect any leftover flavorful remnants from the carrots, celery, and onion we sauteéd in there just before. “French onion soup” mashed potatoes serve as the bed for your beef Bourg, and you’ve got fresh broccoli to round out the plate. Because eating your greens is important (especially when they’re dressed in garlic butter)!

In your bag

  • Beef Bourguignon
  • ”French onion soup” mashed potatoes
  • Fresh broccoli with garlic butter

At home

  • Medium sized pot
  • Two microwave safe bowls (plus 1 more if going for beef bourg option #2)

The Beef Bourguignon 

Option 1: Stovetop:

  1. Pour your beef Bourg into a pot and heat over medium for 10-12 minutes, stirring occasionally, until hot & steamy. (If it’s looking a little thick, add in a splash of water or stock!). Taste and season with S&P.

Option 2: Microwave:

  1. Place your beef Bourg in a microwave safe bowl, cover with a damp paper towel, and microwave until warmed to your liking.

The Broccoli

  1. Place your broccoli in a microwave-safe bowl, add a few tablespoons of water, and cover with a plate or microwave-safe lid. Microwave for about 3 minutes, until the broccoli is bright green and tender. 
  2. Drain excess water from the bowl and add the garlic butter to the broccoli. Microwave until the butter is just melted, then toss to coat and season with S&P.

The Mashed Potatoes

  1. Add mashed potatoes to a microwave-safe dish, add a splash of water, stock or milk, and cover with a damp paper towel. Microwave until warmed to your liking.

A shallow bowl works nicely for serving this meal. Dollop the potatoes in the center, then take a spoon to create a divet to hold your beef Bourguignon. Broccoli on the side? Sounds good. Bon appétit! (Said in our best Julia Child impression.)
