Gluten-Free Chicken Piccata

Prep time: 12-15 minutes

Our chicken piccata features all your favorite lemony and garlicky things: garlicky chicken cutlets, broccoli with garlic butter, and caper cream sauce.


Now, the only question left is who is included in that “for two” part of the equation. No judgment at all if it’s You and Future you ;) Alright, time to piccata plate (pick-out-a plate) and get to preppin’ your piccata!

In your bag

  • Fresh gluten-free ziti rigati
  • Lemon & garlic marinated chicken cutlets
  • Lemon caper cream sauce
  • Fresh broccoli with garlic butter
  • Fresh lemon, gluten-free garlic breadcrumbs & fried capers

At home

  • Large pot
  • Microwave-safe bowl
  • Cutting board & knife

The Ziti Rigati

  1. Bring a large pot of salted water to a boil, then drop in the ziti and give it a stir. 
  2. Cook for 3-4 minutes, then carefully test a noodle for doneness. (We like it al dente, with a slight chew!)
  3. Reserve about a cup of pasta water, then strain!
  4. Mix your pasta in  
  5. Set your pasta pot back over medium heat and warm the lemon caper cream sauce until just simmering.. 
  6. Add in the ziti and stir to coat! If the sauce is looking a little thick, add a splash or two of the reserved pasta water. 

The Chicken & Sauce

  1. Add the sauce and a splash of pasta water to the emptied pasta pot and heat over medium for 5-7 minutes until simmering. 
  2. While the sauce is warming, grab your cutting board and slice the chicken into whatever size pieces you desire.
  3. Once the sauce is hot, add in your chicken and heat for another 2-3 minutes until chicken is warmed through.
  4. Add the spaghetti back into the pot and mix!
  5. If your sauce is looking a little thick, add a splash or two more of pasta water to reach desired consistency. 
  6. Taste and season with S&P.

The Broccoli

  1. Place your broccoli in a microwave-safe bowl, add a few tablespoons of water, and cover with a plate or microwave-safe lid. Microwave for about 3 minutes, until the broccoli is bright green and tender. 
  2. Drain excess water from the bowl and add the garlic butter to the broccoli. Microwave until the butter is just melted, then toss to coat and season with S&P.

Time to plate! Add your saucy pasta and chicken into your bowls. Broccoli goes on the side. Finish with lemon, breadcrumbs & fried capers on top!
