Gluten-Free Pesto Pasta

Prep time: 10-15 minutes

This stunning & veggie packed pasta dish stars fresh (gluten-free!) ziti rigati with a medley of veggies like sugar snap peas, snow peas, green beans, peas, plus fava beans and caramelized onions. It pairs beautifully with our nut-free pesto and feta cheese for garnish! Fresh green beans with lemon vinaigrette come on the side.

In your bag

  • Fresh gluten-free ziti rigati
  • Parm & garlic confit pesto
  • Roasted peas, green beans, and fava beans with caramelized onions, snow & snap peas, baby watercress, arugula, pea shoots, parsley & mint
  • Crumbled feta
  • Fresh green beans with lemon vinaigrette

At home

  • Large pot & strainer
  • Large saute pan
  • Microwave-safe bowl

The Ziti Rigati

  1. Bring a large pot of salted water to a boil (the amount depends on how much water–we recommend a tablespoon per gallon), then drop in the ziti and give it a stir. 
  2. Cook for 3-4 minutes, then carefully test a noodle for doneness. (We like it al dente, with a slight chew!)
  3. Reserve about a cup of pasta water, then strain! 

The Peas, Beans & Leaves

  1. Heat a little oil in a large saute pan. Add in the peas, beans, and leaves and saute until warmed to your liking!
  2. Turn off the heat under your pan. Add in strained ziti and pesto and mix until everything is nicely coated. 
  3. Add a splash of pasta water to adjust to desired consistency and taste and season with S&P.

The Green Beans

  1. Place your green beans in a microwave-safe bowl, add a few tablespoons of water, and cover with a plate or microwave-safe lid. Microwave for about 3 minutes, until the green beans are bright green and tender. 
  2. Drain excess water, then mix in the lemon vinaigrette and season with S&P.

Spoon your pasta into a shallow bowl and sprinkle feta over the top. Enjoy your green beans on the side!
