Gnocchi Bolognese

Prep time: 10 minutes

Time to gnocchi bolo. Yes, it is a verb. You can gnocchi bolo solo, you can gnocchi bolo with a friend, you can gnocchi bolo with the flow, and you can even gnocchi bolo while you drop it low-low. Tonight your gnocchi bolo features fresh gnocchi and a bomb-diggity beef bolognese made by yours truly (us, your loving friends at WECO). A dollop of black pepper whipped ricotta takes it absolutely over-the-top, cus it’s not just gnocchi bolo, it’s WECO gnocchi bolo. Chow time :)

In your bag

  • Potato gnocchi
  • WECO beef bolognese
  • Black pepper whipped ricotta
  • Fresh green beans and lemon vinaigrette

At home

  • Medium pot
  • Microwave safe bowl

The Gnocchi Bolognese

  1. Add your bolognese to your medium pot. Warm over medium heat until lightly simmering, stirring occasionally.
  2. Toss the gnocchi into the pot with the sauce and stir to make sure they’re well coated. Add a splash of water if everything is looking a little thick. Heat until the gnocchi are warmed through.
  3. Taste and season with S&P as needed!

Green Beans & Lemon Vinaigrette

  1. Place your green beans in a microwave-safe bowl, add a few tablespoons of water, and cover with a plate or microwave-safe lid. Microwave for about 3 minutes, until the green beans are bright green & tender. 
  2. Drain excess water, then mix in the lemon vinaigrette and season with S&P.

Serve with a dollop of black pepper whipped ricotta on top and green beans on the side!

Freezing dinner for later? No problem! Toss your pasta & sauce in the freezer, and when you’re ready, pop them in the fridge for 24 hours (or until fully thawed) and follow the steps above!
