Mango-Glazed Salmon with Fried Rice

Prep time: 8-10 minutes oven or 2-3 minutes in the microwave

We are pretty big fans of this slammin’ salmon you’ve got here, and we hope you will be too. Glaze up your salmon and pop it in the microwave or oven, the rest is pretty simple. Hope every bite is better than the last, Fam!

In your bag

  • Grilled salmon with sweet chili mango glaze
  • Fresh bok choy with chili crisp vinaigrette
  • Veggie fried rice with scallion, sprouts & spring peas

At home

  • Aluminum foil-lined sheet tray & a little oil or microwave-safe bowl & damp paper towel
  • Nonstick pan with a little oil or microwave-safe bowl & damp paper towel

The Salmon & Bok Choy

Option #1 (in the oven)

  1. Preheat your oven to 375°F.
  2. Add your salmon (skin side down) and the bok choy to the wooden eco tray. Spoon glaze over the top of the fish.
  3. Bake for 8-10 minutes or until warmed to your liking. Drizzle the chili crisp vinaigrette over the bok choy.

Option #2 (in the microwave)

  1. Place salmon & bok choy on a microwave-safe dish, pour glaze over the top of the fish, cover with a damp paper towel, and heat in 30 second increments until heated to your liking. Drizzle the chili crisp vinaigrette over the bok choy.

The Rice 

Option #1 (on the stovetop)

  1. Add a little oil to a nonstick pan over medium-high heat. Once hot, add in your rice and saute for a few minutes until hot & slightly crispy!

Option #2 (in the microwave)

  1. Add rice to a microwave-safe bowl, add a splash of water over the rice, cover with a damp paper towel, and microwave until warmed to your liking.
