Baja Shrimp Tacos

Prep time: 10 minutes

Hopefully you’re ready as heck for some handheld taco time, cus WE ARE. Forks? Who needs ‘em? Okay, maybe for the rice… But the rest is fair game to be packed into your corn tortillas. Seriously, everything. Citrus-poached shrimp, mango salsa, your slaw, pickled red onion and a squeeze of that lime. We’re partial to a light schmear of the mayo in your tortilla, but you do you. Your favorite hot sauce? Perhaps a nice final touch. 

In your bag

  • Citrus-poached shrimp with guajillo-agave glaze
  • Cilantro-lime rice
  • Crunchy cabbage slaw
  • 6 corn tortillas
  • Fresh mango salsa; Pineapple-chipotle mayo; Pickled red onions; lime
  • Fresh zucchini with lime and Tajin

At home

  • Saute pan
  • Microwave-safe bowl
  • Mixing bowl

The Shrimp 

  1. Heat shrimp in a saute pan with a tablespoon of water over medium for 2-3 minutes or until warmed through.

Alternatively, add shrimp to a microwave safe dish, cover with a damp paper towel, and microwave until warmed to your liking!

The Rice

  1. Put rice in a microwave-safe bowl. Add a splash of water, cover with a damp paper towel, and microwave until heated.

The Slaw

  1. Mix the slaw and the pineapple-chipotle mayo in a bowl. No need to overdo the mayo, start light. 
  2. Season with S&P and mix. 

The Tortillas

  1. Warm ‘em up! You can heat them over an open flame for 5-10 seconds per side, in a nonstick pan, or in the oven for 1 min or so (be careful not to dry them out!). Whatever you choose, wrap them in a kitchen towel until ready to serve so they steam a little & stay pliable!

The Zucchini

  1. Heat your saute pan over medium. Once hot, add a drizzle of olive oil and your zucchini. Season with S&P. Cook, stirring frequently, until the zucchini is tender and the edges begin to brown. Remove from the heat.
  2. Squeeze your lime all over the zucchini. Sprinkle Tajin to taste (start slow, it has a kick!) and toss to combine. 

Assembly time! Layer a tortilla with shrimp, mango salsa & onion. Slaw can go in the tacos or on the side. Spoon rice and zucchini next to your tacos, spritz lime all over, and voila!
