BBQ Pulled Pork with Mac & Cheese

Prep time: 3-4 minutes microwave or 20 minutes oven

Are you wearing ‘em? Your stretchy pants? We hope so, ‘cause your slow-cooked pulled pork with BBQ sauce is here and you’ve got some chowing to do. Best of all: The only work standing between you and this BBQ feast is a quick toss of a sheet tray in the oven and a snappy saucing of your slaw! We love cooking for you, Fam! Enjoy :)

In your bag

  • Slow-cooked pulled pork
  • WECO bourbon BBQ sauce
  • Cheddar mac & cheese with garlic panko
  • Shaved cabbage & vegetable slaw
  • Sweet chili aioli

At home

  • Aluminum foil-lined sheet tray and a small casserole dish with tin foil OR two microwave-safe bowls
  • Mixing bowl

The Pulled Pork, BBQ Sauce and Mac & Cheese  

Option #1 (in the microwave)

  1. Mix pulled pork and BBQ sauce together in a microwave -safe bowl and cover with a damp paper towel.
  2. Scoop some mac & cheese into a separate microwave-safe bowl, add a splash of water or milk and cover with a damp paper towel. Microwave both until warmed to your liking!

Option #2 (in the oven, for some crispy edges!)

  1. Preheat your oven to 375F. Pop your mac & cheese into a small casserole dish and cover it with foil. Set it on one side of your lined sheet tray and pop in the oven for 15 minutes.
  2. Carefully take the tray out of the oven, and remove the foil from your mac.
  3. Add pork to the open side of the tray and cover it with BBQ sauce. Give it a mix so it’s well incorporated!
  4. Back into the oven it all goes for another 10 minutes, or until the pork is warm and the mac is hot and bubbly.

The Slaw

  1. Add slaw to a bowl and pour in the aioli to your liking (we recommend starting light!). Mix!

To serve, keep it casual: Pile up your plate with a scoop each of BBQ pulled pork, mac & cheese and slaw!

Freezing for later? Toss the pulled pork with the BBQ sauce, and top the mac & cheese with the panko. Freeze for up to 3 months. When ready to eat, thaw in the fridge overnight, then follow the stovetop or microwave instructions above! The shaved cabbage & vegetable slaw and sweet chili aioli are best enjoyed fresh ;)
