Chicken Piccata

Prep time: 10 minutes

Our chicken piccata features all your favorite lemony and garlicky things: Tender marinated chicken, roasted broccoli, toasted breadcrumbs, and caper cream sauce.

Now, the only question left is who is included in that “for two” part of the equation. No judgment at all if it’s You and Future you ;) Alright, time to piccata plate (pick-out-a plate) and get to preppin’ your piccata! 

In your bag

  • Spaghetti
  • Lemon & garlic marinated chicken cutlets
  • Lemon caper cream sauce
  • Fresh broccoli with garlic butter
  • Toasted garlic breadcrumbs
  • Fresh lemon & fried capers

At home

  • Medium pot
  • Microwave-safe bowl
  • Saute pan and butter (optional for plain pasta)

The Spaghetti, Chicken & Sauce

  1. Add the sauce to a pot and heat over medium for 5-7 minutes until simmering. Add a splash of water if the sauce is looking a little thick. 
  2. Once hot, add in your spaghetti and toss in the sauce.
  3. Add your chicken cutlets and heat for another 2-3 minutes until the chicken is warmed through.
  4. Taste and season with S&P.

For Plain Pasta: 

  1. Don’t want your pasta in the sauce? Warm your saute pan on the stove over medium heat. Add your pasta and a pat of butter or a tablespoon of water. Warm the pasta over medium heat for ~5 minutes until the pasta is heated through. 

The Broccoli

  1. Place your broccoli in a microwave-safe bowl, add a few tablespoons of water, and cover with a plate or microwave-safe lid. Microwave for about 3 minutes, until the broccoli is bright green and tender. 
  2. Drain excess water from the bowl and add the garlic butter to the broccoli. Microwave until the butter is just melted, then toss to coat and season with S&P.

Time to plate! Swirl saucy pasta and chicken into your bowls.. Broccoli goes on the side, and breadcrumbs on top. Finish with lemon & fried capers on top!
