Pesto Orecchiette

Prep time: 7-10 minutes

This stunning & veggie packed pasta dish stars orecchiette with a medley of veggies like sugar snap peas, snow peas, green beans, peas, plus fava beans and caramelized onions. It pairs beautifully with our nut-free pesto and feta cheese for garnish! Fresh green beans with lemon vinaigrette come on the side.

In your bag

  • Orecchiette pasta
  • Parm & garlic confit pesto
  • Roasted peas, green beans, and fava beans with caramelized onions, snow & snap peas, baby watercress, arugula, pea shoots, parsley & mint
  • Crumbled feta
  • Fresh green beans with lemon vinaigrette

At home

  • Large saute pan
  • Pat of butter (optional)
  • Microwave-safe bowl

The Peas, Beans & Leaves and Orecchiette

  1. Heat a little oil in a large saute pan. Add in the peas, beans, and leaves and saute for several minutes until veggies are heated through.
  2. Add the cooked orecchiette to the veggies with a splash of water. Add in the pesto and give everything a good mix. Heat until warmed through. Taste and season with a little S&P. 

For Plain Pasta: 

  1. Don’t want your pasta in the sauce? Warm your saute pan on the stove over medium heat. Add your pasta and a pat of butter or a tablespoon of water. Warm the pasta over medium heat for ~5 minutes until the pasta is heated through. 

The Green Beans

  1. Place your green beans in a microwave-safe bowl, add a few tablespoons of water, and cover with a plate or microwave-safe lid. Microwave for about 3 minutes, until the green beans are bright green and tender. 
  2. Drain excess water, then mix in the lemon vinaigrette and season with S&P.

Spoon your orecchiette into a shallow bowl and sprinkle feta over the top. Enjoy your green beans on the side!
