Adobo Chicken Burritos for Two

Prep time: 10-12 minutes

Good evening, Fam! In your bag you’ll find all the components needed for a burrito-ful dinner experience: Tender braised adobo chicken; saffron-paprika rice & black beans; and saucy fixins (chipotle-lime crema & smoky salsa roja). Last but not least, you’ve got your beloved Mrs. Chips chili-lime tortilla chips. Snack on them on the side with a little salsa roja, or toss a couple in your burrito to add a zingy crunch to each bite. Or both!

In your bag

  • Shredded braised adobo chicken
  • Saffron-paprika rice & black beans
  • Chipotle-lime crema
  • Salsa roja
  • 2 flour tortillas
  • Shredded cheddar cheese
  • Mrs. Chips chili-lime chips

At home

  • Aluminum foil-lined sheet tray
  • Microwave-safe bowl
  • Microwave-safe plate or nonstick pan (depending on how you want to warm your tortillas!)
  • Saute pan (optional, to griddle your burrito)

The Adobo Chicken & Chips

  1. Preheat your oven to 375F.
  2. Drizzle a little oil (canola) onto a foil-lined sheet tray, and toss your adobo chicken on top. (Leave some open space on one side if you want to toast your chips on there too!)
  3. Pop your sheet tray in the oven for 10-12 minutes or until the chicken is warmed through.
  4. Optional: With 3-4 minutes left to go, spread your chips on the open side of the sheet tray to warm them up.

The Rice

  1. Scoop the rice into a microwave-safe bowl. Add a splash of water, cover with a damp paper towel, and heat until warmed to your liking.

The Tortillas

Don’t skip this step! Cold tortillas won’t roll well :)

  • Option 1: Toss them on a microwave-safe plate and cover with a damp paper towel. Microwave for 10-15 seconds. 
  • Option 2: Warm them in a dry nonstick pan one at a time. 

Now, assemble! We like to start with a bed of rice, a little of each sauce, and finally, spoon on some chicken — sandwiching your sauces in the middle means fewer leaks! 

But wait— we’re not done yet, Fam! If you’re looking for some optional (and delicious) extra credit, you can griddle them! Just heat a saute pan over medium, add a drizzle of oil, and then add your burrito seam-side-down. Heat 2-3 minutes until golden brown, flip it over, and repeat on the other side.
