Beef Lasagna for Two

Prep time: 40-45 minutes from fresh or 1.5 hours from frozen

Our signature lasagna (aka pasta cake) is such a Fam Fave, it's basically the unofficial WECO mascot! Savory beef bolognese, creamy béchamel sauce, and marinara layered between noodle sheets, with mozzarella, Parmesan & basil. Topped with a layer of garlic panko to give each bite craveable crunch. Weeknights are hectic enough, so go ahead and set yourself up with an easy, comforting, set-it-and-forget-it meal that everyone will agree on. (Pro tip: Your 2-lb. tin of lasagna can be frozen for when Future You doesn't feel like cooking, so go ahead and stock up!)

  • Sheet pan & aluminum foil
  • Olive oil or cooking spray (optional)

Option #1 (enjoy fresh): Remove the lid and cover the tin with foil. Place tin on a sheet pan and bake at 375°F for 30 minutes. Carefully remove foil and bake for 10-15 minutes more, or until breadcrumbs are browned and cheese is bubbly!

Option #2 (freeze for later): Remove plastic cover. Brush a dash of oil on a small rectangular piece of foil (enough to cover the top of your lasagna). Place foil over the lasagna (oil side down) and firmly press down to remove any trapped air. When ready to eat, remove plastic cover, cover fully with itn foil and bake at 350°F for 1 hour & 15 minutes. Remove foil and bake for 10-15 minutes more until breadcrumbs are browned and cheese is bubbly!
