Chef Matt's Taco Salad Kit

Prep time: 5-7 minutes

We don't normally do this, but we're trying something new! Chef Matt & his team (aka the Test Kitchen) have a brand new recipe, and we’re so excited to have you try it first! Let us know what you think and if this deserves a spot in the regular WECO rotation :)

In your bag

  • Baby iceberg lettuce
  • Taco-seasoned ground beef
  • Salsa verde, pico de gallo, chipotle lime crema, and pickled red onion
  • Shredded cheddar and jack cheese
  • Mrs. Chips chili lime chips

At home

  • Medium saute pan or microwave-safe bowl
  • Cutting board and knife
  • Mixing bowl

The Taco Meat

Stovetop option:

  1. Add a little oil to a medium saute pan and place over medium heat. Add in your taco meat and heat, stirring, until warmed to your liking!

Microwave option:

  1. Add taco meat to a microwave-safe bowl and microwave until warmed to your liking!

To Assemble

  1. Grab your cutting board and knife and give the iceberg lettuce a chop.
  2. Toss the lettuce into a mixing bowl along with the warmed taco meat, cheese, pico de gallo, and pickled red onion. Drizzle in the chipotle lime crema and add dollops of salsa verde to your liking. Mix, mix, mix! 
  3. Enjoy chips on the side (dip them into any extra salsa verde or chipotle lime crema), use them to scoop up bites of your salad (who needs a fork?) or break them up a bit and toss them into your salad as well!
