We know how much you love our Sweet Chili Shrimp Lettuce Wraps, Fam, so we decided to bring you another delectable version using chicken! You’ve got the same springy, lime-zesty vermicelli, curry peanut sauce, crunchy pickles, cashew crumble, and some crisp Bibb lettuce to wrap everything up nicely. Of course, if you’re not a fan of wrapping, you can chop your lettuce and assemble this as a salad-style creation. We hope you enjoy!

In your bag

  • Coriander and cumin dusted diced chicken thigh
  • Bibb lettuce
  • Lime leaf vermicelli noodles
  • Yuzu pickles, coconut curry peanut sauce, shallot cashew crunch, & chili-lime vinaigrette
  • Green papaya and mango slaw

At home

  • Mixing bowl
  • Knife or kitchen shears (optional)
  • Microwave-safe bowl

The Slaw and Chili-Lime Vinaigrette

  1. Add slaw to a mixing bowl & drizzle vinaigrette all over. 
  2. Mix to incorporate it all!

The Chicken

  1. Add chicken to a microwave-safe bowl, cover with a damp paper towel, and microwave until just warmed (you don’t want it too hot or it’ll wilt the lettuce!)

Assembly time!

  1. Remove leaves from the stem of the lettuce, keeping them intact and cup-like.
  2. Assembly time!
  3. Drop a little bundle of noodles into your lettuce cup. (Pro tip: Use a knife or kitchen shears to cut them into shorter, more manageable strands.)
  4. Spoon some chicken on top. 
  5. Add on a dollop of peanut sauce. If it’s looking a little thick, transfer it to a small bowl with a couple splashes of warm water and mix, or add sauce to a microwave-safe bowl and briefly microwave until sauce is at a more pourable consistency.
  6. Finish with a sprinkle of shallot cashew crumble and a few yuzu pickles. 
  7. Repeat for each lettuce cup! 

Plate up your wraps up with some slaw on the side and dig in!
