Chicken Piccata Dinner for Two - WECO Hospitality

Chicken Piccata Dinner for Two

September 13, 2024

Prep time: 10-15 minutes

Our test kitchen (aka culinary wizards) team gave the dish a well-deserved glow-up and we’re serving it up for two. That means more of all your favorite lemony and garlicky things: Tender marinated chicken, roasted broccoli, toasted breadcrumbs, and caper cream sauce. We repeat: More lemon & garlic caper cream sauce.

Now, the only question left is who is included in that “for two” part of the equation. No judgment at all if it’s You and Future you ;) Alright, time to piccata plate (pick-out-a plate) and get to preppin’ your piccata!

In your bag

  • Deano’s fresh spaghetti
  • Lemon & garlic marinated chicken cutlets
  • Lemon caper cream sauce
  • Roasted broccoli with garlic confit
  • Toasted garlic breadcrumbs
  • Lemon wedges & fried capers

At home

  • Large pot, strainer & tongs
  • Microwave-safe bowl
  • Cutting board and knife

The Spaghetti:

  1. Bring a pot of salted water to a boil (the amount depends on how much water–we recommend a tablespoon per gallon), then add your noodles & stir!
  2. Cook for about 2-3 minutes, then test a strand for doneness. (We like it al dente, with a little chew!)
  3. Reserve about ½ cup pasta water and strain. Set spaghetti aside. Keep the pasta pot!

The Chicken & Sauce

  1. Add the sauce and a splash of pasta water to the emptied pasta pot and heat over medium for 5-7 minutes until simmering.
  2. While the sauce is warming, grab your cutting board and slice the chicken into whatever size pieces you desire.
  3. Once the sauce is hot, add in your chicken and heat for another 2-3 minutes until chicken is warmed through.
  4. Add the spaghetti back into the pot and mix!
  5. If your sauce is looking a little thick, add a splash or two more of pasta water to reach desired consistency.
  6. Taste and season with S&P.

The Broccoli:

  1. Add to a microwave-safe dish, cover with a damp paper towel, and microwave until warmed to your liking.

Plate up your saucy pasta and chicken! Broccoli goes on the side, and breadcrumbs on top. Finish with lemon & fried capers on top!

That’s it! #Dinnersolved, dinner served.
