Chimichurri Chicken Dinner for Two

Prep time: 10-15 minutes oven or 2-3 minutes microwave

Raise your hand if you love a shareable, pop-a-sheet-pan-in-the-oven dinner! Includes 2 chicken drumsticks & 2 thighs, marinated in a vibrant, tangy chimichurri herb sauce, then char-grilled to perfection. Served with roasted Yukon potatoes tossed with paprika and parsley. P.S. The "two" in "dinner for two" can also be You and Future You. We like to save some chicken to toss in a salad or grain bowl for lunch the next day. (Or maybe a quesadilla or pasta? Go nuts!)

In your bag

  • Chimichurri chicken (2 thighs & 2 drumsticks)
  • Chimichurri
  • Roasted Yukon potatoes with paprika and parsley

At home

  • Lightly greased aluminum foil-lined sheet tray OR microwave-safe dish and damp paper towel

Preheat oven to 375F. Arrange potatoes and chicken on a lightly greased foil-lined sheet tray, and heat for 10-15 minutes, or until hot. Alternatively, place both chicken and potatoes on a microwave safe dish, cover with a damp paper towel, and microwave until warmed to your liking. Test chicken to see if warm inside and serve! Enjoy with more chimichurri :)
