Chef Daron Goldstein's Pork Chop & Spätzle

Prep time: 20 minutes (but so worth it!)

In partnership with Chef Daron Goldstein of Provender Kitchen + Bar in Ellsworth, Maine! This winner winner, pork chop dinner stars a brined & grilled bone-in pork chop paired with a thyme roasted pear and baby golden beets! And let’s not forget about the Cacio e Pepe Spätzle on the side. Plus! Crispy pancetta & a cider reduction for drizzling alllll over.

In your bag

  • Grilled pork chop
  • Spätzle with cacio e pepe cream sauce & Parm
  • Thyme roasted pears
  • Baby golden beets
  • Crispy pancetta
  • Cider reduction

At home

  • Casserole dish & aluminum foil
  • Microwave-safe plate or aluminum-foil lined sheet tray
  • Nonstick pan

The Pork Chop 

  1. Preheat your oven to 350F.
  2. Place pork chop in your casserole dish, and drizzle 1 tablespoon of water over the top (this will keep it nice and moist!)
  3. Cover the dish tightly with foil, then pop it in the oven for 15-20 minutes, or until warmed to your liking. 

Spätzle, Cacio e Pepe Sauce & Parm

  1. Heat a nonstick pan over medium heat with a little butter or oil. Once hot, add in your spätzle and heat it for a minute or so, letting it crisp up a bit in the pan! 
  2. Once the spätzle is heated & crisped to your liking, turn the heat to low and add in the cacio e pepe sauce and a little parm. Stir to combine and heat until warmed through!

Pears & Beets

Microwave option:

  1. Add pears and beets next to each other on a microwave safe plate, cover with a damp paper towel, and heat until warmed to your liking! (Should take only seconds)

Oven option:

  1. Add pears and beets next to each other on a foil-lined tray and pop in a 350F oven until warmed to your liking!

Cider Reduction

  1. Add cider reduction to a small microwave-safe bowl, cover with a damp paper towel, and heat in 30-second intervals until hot!

Arrange your pork chop, spätzle, pears, and beets next to each other on a plate. Add a little more parm on top of your spätzle. Sprinkle crispy pancetta and drizzle your cider reduction over the top. Enjoy!
