This hearty dinner is a play on the traditional Coq au Vin–and it’s gluten-free! Featuring bone-in chicken thighs & drumsticks slowly cooked in a coq au vin sauce with pearl onions, carrots, bacon, mushrooms, garlic, balsamic, and red wine. Served with mashed parsnips with butter, shallots, and thyme... perfect for soaking up all that tasty sauce!  

In your bag

  • Braised chicken thighs & drumsticks with bacon and roasted mushrooms, pearl onions, and carrots
  • Red wine jus
  • Mashed parsnips

At home

  • Casserole dish
  • Microwave-safe bowl

The Chicken, Veggies, and Jus:

  1. Preheat your oven to 375F.
  2. Arrange your chicken & veggies evenly in your casserole dish, then pour the red wine gravy on top.
  3. Toss your dish in the oven for 25-35 minutes or until warmed through!

The Mashed Parsnips:

  1. Add mashed parsnips to a microwave-safe dish, mix in a splash of water, milk, or stock, cover with a damp paper towel, and microwave until warmed to your liking!

To plate, add some chicken and gravy onto your dish. Because this dish is gluten-free, don’t worry if the gravy doesn’t look super thick. Scoop some mashed parsnips on the side and dig in!
