Guest Chef: Michelle Mulford’s Lamb Tagine

Prep time: 15-20 minutes oven/stovetop or 2-3 minutes microwave

This indulgent dinner features lamb braised with coriander, turmeric, saffron, oregano, and cumin. Served with roasted root veggies (carrots, butternut squash, parsnip), mushrooms, and chickpeas and paired with Michelle's date relish and preserved lemon for garnishing.

In your bag

  • Braised lamb & jus
  • Roasted carrots, butternut squash, maitake mushrooms & parsnip
  • Brown butter chickpeas with parsley and sumac
  • Date relish
  • Preserved lemon

At home

  • Lightly greased aluminum foil-lined sheet tray and medium pot or 2 microwave-safe dishes

The Lamb Tagine 

Oven/stovetop option:

  1. Heat oven to 350F.
  2. Arrange the veggies and chickpeas side by side on the greased foil-lined sheet tray and pop into the oven for 10-12 minutes.
  3. Meanwhile, add the lamb and jus to your medium pot and heat over medium-low until hot and tender! 

Microwave option:

  1. Add lamb to one microwave-safe dish and veggies & chickpeas to another. Cover both with a damp paper towel and microwave until heated to your liking!

To plate, shallow bowls work best! Start with a heaping spoonful of your veggies and chickpeas, and add braised lamb on top. Drizzle that jus allll over, and top with date relish and preserved lemon. Enjoy!
