Lamb Biryani Dinner for Two

Prep time: 2-3 minutes microwave or 6-8 minutes stovetop

This lamb biryani magic you’ve got in front of you is pure magic! Biryani is an Indian dish generally composed of layered & spiced basmati rice and meat (like lamb, chicken or goat!). Our recipe is a slight spin on the traditional: We whipped up a yogurt marinade for the lamb and roasted it overnight, so that all you gotta do now is toss it in a non-stick pan or the microwave with your rice to warm up! The raita offers a nice cooling effect after every bite of the biryani, and we highly recommend dippin’ your naan in there too :)

In your bag

  • Yogurt & curry marinated lamb
  • Basmati rice cooked in shorba (biryani gravy) with saffron, caramelized onion, mustard seed & coriander
  • Sweet potato korma braised in coconut milk
  • Cucumber & red onion raita
  • Naan

At home

  • Large non-stick pan OR microwave-safe bowl
  • Saucepan OR microwave-safe bowl

The Lamb & Basmati Rice (this becomes your biryani!)

Stovetop option:

  1. Heat a non-stick pan over medium for a minute or so, then add some oil, your lamb, and rice.
  2. Mix everything up, and heat for 6-8 minutes, stirring occasionally, until hot and a little crispy. 

Microwave option:

  1. Add your lamb and rice to a microwave-safe dish, splash some water over the top, cover with a damp paper towel, and microwave until warmed to your liking. 

The Sweet Potato Korma

Stovetop option: 

  1. Add korma to a saucepan with a small splash of water.
  2. Cook over medium heat for 5-6 minutes, stirring occasionally, until hot & steamy.

Microwave option

  1. Add korma to a microwave-safe bowl and pour in a small splash of water. Cover with a damp paper towel and microwave until warmed to your liking! 

The Naan

Toast it up! You can use the oven, air fryer, or toaster.

Scoop your biryani into a bowl, and add korma next to it. Enjoy raita cold as a dip or a drizzle – your call! We like to use the naan to scoop a little bit of everything up with each bite. Dig in!
