Leslie Lee’s Bibimbap for Two

Prep time: 4-5 minutes microwave & stovetop or 6-8 or minutes stovetop

In partnership with Leslie Lee, longtime member of the WECO Fam! We are thrilled to have Leslie share this recipe with the WECO community. Leslie selected Bibimbap as one of the featured recipes because it was a staple of community gatherings growing up. Each family would bring a different component of the dish to share and enjoy together!

In your bag

  • Jasmine rice with farro, and quinoa
  • Soy & sesame marinated beef
  • Roasted zucchini, bell peppers, radish & sesame kale
  • Roasted sesame onions, roasted shiitakes, shredded carrots, and roasted cucumbers
  • Kimchi, gochujang sauce and bean sprout soup.

At home

  • Nonstick pan or a large microwave safe bowl
  • Small saucepan
  • Two large eggs & a nonstick pan (optional, for sunny-side-up egg add-on!)

The Bibimbap

Option #1 (in the microwave)

  1. Set aside the kimchi, gochujang, and bean sprout soup. Add the rest of the ingredients to a microwave-safe bowl.
  2. Add a splash of water to your bowl, cover with a damp paper towel, and microwave until warmed to your liking. 

Option #2 (on the stove, for some crispy rice crunch!):

  1. Set aside the kimchi, gochujang, and bean sprout soup.
  2. Heat your nonstick pan over medium for ~1 minute.
  3. Add a tablespoon of oil to the pan, then add the rest of the ingredients. 
  4. Heat for 2-3 minutes, stirring frequently, until everything is nice and hot, and the rice is just a little crisped. 

The Bean Sprout Soup

  1. Pour your bean sprout soup into your small saucepan and simmer over medium heat until warmed to your liking.

The Gochujang Sauce 

  1. If you want to spice up the gochujang, add a dash of hot sauce to the ramekin and stir well. (We recommend Sriracha, but any hot sauce you have on hand will work!).

Optional Extra Credit: Sunny-side-up Egg

  1. Heat 1 teaspoon of oil or butter in a nonstick pan over medium heat.
  2. Crack in your egg, season it with a little S&P, and cover the pan with a lid. Cook 2-3 minutes until the white is set but the yolk is still runny.

Time to serve! Scoop your warm rice into two bowls, and nestle your  kimchi on top. Top each bowl with your fried egg (if you made it!), and drizzle that gochujang sauce all over — but start light, it’s got a kick!
