Leslie Lee's Tteokbokki for Two

In partnership with Leslie Lee, longtime member of the WECO Fam! We are thrilled to have Leslie share this recipe with the WECO community. Growing up, this dish was a staple "comfort food" and was enjoyed everywhere from school to post-church gatherings. Leslie’s version features Tteokbokki (hot spicy rice cakes) in a dreamy sauce with Gochujang and Korean chili flake, fish cake, and hard boiled eggs.

In your bag

  • The Tteokbokki rice cake & sauce
  • Ramen noodles
  • Hard boiled eggs, scallions, and fish cake

At home

  • Large saucepan
  • Microwave safe bowl

The Tteokbokki, Sauce, Fish Cake, & Scallions

  1. Heat your saucepan over medium heat. Add your Tteokbokki rice cakes, extra sauce (start light, and add more to get the consistency that you like) and fish cakes. Simmer over medium heat 2-3 minutes until everything starts to bubble. Add a splash of water if everything is looking a little thick.
  2. Add in the scallions, mix well and remove from the heat.

The Ramen Noodles 

  1. Add the ramen noodles to a microwave safe bowl. Add a splash of water, cover with a damp paper towel and microwave until hot!

Okay, now for making it look pretty! Add your ramen noodles to your bowls. Add in the Tteokbokki over the ramen. Cut your hard boiled egg in half and place on top. Dig in and enjoy this tasty dish!
