Meatballs & Polenta

Prep time: 5-7 minutes or 15-20 minutes (depending on method!)

YUSSSSS. That’s the noise we made when Chef Matt told us these lookers (the meatballs) were back on the menu this week. Like, dream come true? Maybe Chef Matt is more like a Fairy Godfather who grants all our wishes, which would make sense because we honestly don’t know how he hit the nail on the head with this one. Did he know this polenta was in our dreams last night? Cause a three cheese blend homemade polenta doesn’t just magically appear in front of you. Or…maybe it does, cause, it kinda just did. The tomato sauce we kept simple, with San Marzanos, garlic, and basil. The green beans, with they’re hint of lemon and salty snap of capers, add the perfect touch of acidity to this warm and filling meal. Time to dig into this dream come true, yes please!

In your bag

  • Meatballs
  • Tomato sugo
  • Cheesy polenta
  • Citrus caper broccoli

At home

  • Casserole dish & aluminum foil
  • 1 small saucepan
  • Aluminum foil-lined sheet tray and a little oil
  • 3 microwave safe dishes (optional, for microwave options!)

The Meatballs & Sugo

Oven option:

  1. Preheat the oven to 350F. Place the meatballs in a casserole dish & pour the sugo over the top.
  2. Cover the casserole dish with foil and heat for 15-20 minutes or until warmed to your liking.

Microwave option:

  1. Add meatballs to a microwave-safe dish and pour the sugo over the top. Cover with a damp paper towel & microwave until heated to your liking!

The Polenta 

Microwave option:

  1. Add polenta to a microwave-safe bowl & cover with a damp paper towel.
  2. Heat for a minute, then remove and stir. Add a splash of water or stock. Repeat until the polenta is hot & at your desired consistency! Taste and season with S&P.

Stovetop option:

  1. Add polenta to a small saucepan over low heat. Add a splash of water or stock. Maybe a pat of butter too?
  2. Break up your polenta with a spoon and stir until smooth. Add more water or stock to get your desired consistency.
  3. Taste and season with S&P. 

The Broccoli

Oven option:

  1. Put your broccoli on a lightly greased foil-lined sheet tray and add to the 350F oven with your meatballs & sugo. Cook for 10 minutes or until warmed to your liking!

Microwave option:

  1. Add to a microwave-safe plate, cover with a damp paper towel, and microwave until warmed to your liking!

Plate by spooning the polenta onto the center of your plate, placing the meatballs on top with your sugo, and the broccoli alongside.
