Mei Mei Lemongrass Pork Dumpling Salad Kit

Prep time: 5-10 minutes

Inspired by Mei Mei’s artisanal dumplings and Chef Irene Li, this dumpling “salad” stars Mei Mei’s signature lemongrass pork dumplings filled with pasture-raised pork, cabbage, scallions, ginger, and garlic.

Served with baby romaine lettuce, red onions, cherry & cluster tomatoes, fresh basil, fried shallot, and our own chili crisp vinaigrette for drizzling all over.

In your bag

  • 6 Mei Mei pork & lemongrass dumplings
  • Baby romaine lettuce, chili crisp vinaigrette, cherry tomatoes & red onions, cluster tomato, fried shallots and fresh basil

At home

  • Saute pan with a fitted lid, a little oil, tongs or a spatula, and 2 tbsp water or microwave-safe bowl and damp paper towel
  • Large bowl
  • Cutting board and knife

Microwave option:

  1. Add dumplings to a microwave-safe dish, cover with a damp paper towel, and microwave until heated to your liking.

Stovetop Option

Set a saute pan over medium heat. Pour in a little oil and let it heat up for a minute or so.

  1. Add in dumplings and pan fry them for 1-2 minutes until warm, but keep an eye not to burn them!
  2. Once warmed to your liking, pour 2 tbsp of water into the pan and immediately cover with the lid. Turn the heat to low and let them steam for 2-3 minutes.
  3. Once done, carefully move the pan off the burner and let it sit for a minute uncovered while you assemble the salad.

The Lettuce, Tomatoes, Basil & Crispy Shallots

  1. Chop or tear your lettuce into bite-sized pieces and add to a bowl.
  2. Cut your tomato into 8 slices. Place the tomatoes over the lettuce and add the cherry tomatoes and red onions. 
  3. Pour some of your dressing over your salad. Toss lettuce, tomatoes, onions and dressing, and season with S&P.
  4. Chop or tear your basil into small pieces (or leave it whole, up to you!).

Assembly time! Add your warm dumplings to your bowl with your lettuce, tomatoes and onions. Add your crispy shallots & basil. Pour over more dressing to taste, mix and enjoy!
