Melanie's Famous Cauliflower Cobb

Melanie's Famous Cauliflower Cobb

August 5, 2024

Prep time: 15 minutes

This is the vegetarian version of AFNCC (Andrew’s Famous Nashville Chicken Cobb) and Melanie has a bet that this baby will quickly outpace Andrew’s version to take the top spot as most beloved salad. As Katie A. wrote last time, “I am not a vegetarian but I think I might actually like this one a little better.” We’re surprised but also not surprised, because this crispy cauliflower is EVERYTHING.

In your bag

  • Nashville fried cauliflower & hot sauce
  • Baby romaine; cherry tomatoes & red onions
  • Avocado ranch dressing, blue cheese, chopped egg & crispy chickpeas

At home

  • Lightly greased foil-lined sheet tray (optional)
  • Mixing bowl
  • Cutting board & knife

The Fried Cauliflower & Hot Sauce:

Option #1 (in the oven):

  1. Preheat oven to 375F.
  2. Place your cauli on the lightly greased foil-lined sheet tray & pop it in the oven for 10-15 minutes, until crisp.

Option #2 (in the air fryer):

  1. Preheat air fryer to 350F.
  2. Add your cauliflower and heat for 8-12 minutes, or until crisped and warmed to your liking.
  3. Once your cauliflower is ready, add it to your mixing bowl and drizzle hot sauce over.
  4. Toss to coat!

The Salad:

  1. Chop up your lettuce!
  2. Pop it all into a bowl and top with crispy chickpeas, tomato, onion & egg. Sprinkle on your blue cheese.
  3. Drizzle your ranch all over and toss until nicely coated. Season to taste with salt and pepper!
  4. Top with your tasty cauliflower :)

See the salad? Eat the salad. Enjoy the salad. Crush the salad. Start looking forward to your next dinner date with the salad. Fin.

That’s it! #Dinnersolved, dinner served.
