Miso & Honey-Glazed Pork Tenderloin

Prep time: 8-10 minutes or 12-15 minutes (depending on method)

Get ready for a flavor explosion, folks! Pairing umami queen miso with honey makes this pork tenderloin the perfect salty-sweet dinner journey. Speaking of sweet: We’re pretty sure that you’ll never look at sweet potatoes the same after you try them with brown butter & maple syrup— you’re welcome!! We also added some greens to the meal because, you know, health. Thankfully serving Brussels sprouts with bacon and caramelized onions makes it SO easy to get your veggies in. Drizzle some scallion salsa verde over everything and DIG IN, Fam! 

In your bag

  • Roasted pork tenderloin
  • Miso honey glaze
  • Sweet potato mash with brown butter & maple syrup
  • Roasted Brussels sprouts
  • Bacon bits
  • Charred scallion salsa verde

At home

  • Microwave-safe bowl
  • Lightly greased aluminum foil-lined sheet tray
  • Cutting board, knife & tongs

The Pork & Brussels:

  1. Preheat oven to 350F. Place the pork and Brussels sprouts next to each other on a lightly greased foil-lined sheet tray & brush miso-honey glaze over the top of the pork.
  2. Alternatively: Add Brussels to a microwave-safe dish, cover with a damp paper towel, and microwave until warmed to your liking.
  3. Heat in the oven for 8-10 minutes or until warmed to your liking. (Pro tip! For extra crispy bacon, sprinkle it on top of sprouts halfway through heating)
  4. Carefully remove the dish from the oven & use the tongs to place the pork on a cutting board.
  5. Let it sit for a few minutes, then slice into ½ inch slices. 
  6. Heads up! We brined your pork to keep it super moist, which turns the center a little pink, even after heated through. Feel free to heat longer if you prefer it more well done!

The Mashed Potatoes :

  1. Add the mashed potatoes to a microwave-safe bowl, add a splash of water, cover with a damp paper towel, and microwave until warmed to your liking.

Big dollop of mash goes on the plate first, then your Brussels and slices of pork can go on either side. Sprinkle bacon bits over the sprouts and spoon salsa verde on everything :)
