Do you love prime rib, but don’t love all the time and effort involved? Don’t worry Fam, we’ve got you! While certainly faster than preparing a rack from start to finish, this dish does require a little extra prep time. First, we’re going to let the steak rest at room temp for a few minutes— this equalizes the temp so it heats evenly! Then, we’re going low and slow in the oven to keep your prime rib pink & juicy. The Prime Rib & Broccoli Cheddar Gratin
Preheat your oven to 300°F.
Meanwhile, remove the prime rib from the fridge & rest it on the counter for 10 minutes.
Next, remove the lid to your broccoli & cheddar gratin and add it to a foil lined sheet tray. Pop the tray in the oven for 20 minutes or until you start to see some bubble action!
After your gratin has been in the oven for 10 minutes, wrap your individual steak(s) tightly with foil, place on the foil-lined sheet tray, and leave for 8-10 minutes.
When you’re ready to check the steak, carefully remove tray from oven and take a look — since every oven is different, it’s best to check early! If it’s hot & juicy, you’re ready to go. If not, re-wrap with foil, and place back in the oven for 4-5 more minutes (or longer!), depending on how close the steak is to your desired temperature.
When your steak is ready, pull the gratin and steak out of the oven and let the steak rest for a few minutes in the foil.
Check your gratin (poke with a knife and feel the temp of the blade). If it’s not quite ready, put it back in for another 5-10 minutes. Then, finish under the broiler for a minute or two to crisp up the top!
The Baked Potato
Place your potato on a microwave safe plate and microwave for 2-3 minutes or until warmed to your liking.
Ready to feast? Remove the steak from the foil and add it to your plate. Cut a slice down the center of your baked potato and pour the horseradish crema over both, if you like! Heaping spoonful of gratin goes on the side. Enjoy!
