Rajas Poblanos & Bean Enchilada Kit for Two

Prep time: 5 minutes prep time, 20 minutes heating time

In partnership with James Beard-nominated Chef David Vargas of Vida Cantina in Portsmouth, NH! This RYO (roll your own) enchilada kit includes: rajas (roasted poblano & bell peppers, roasted onions), Chef David Vargas’ black beans, mole sauce with red chilis, shredded Chihuahua cheese, 6 corn tortillas from All Souls (made from scratch in Burlington VT!), and saffron rice with black beans. Plus salsa roja and cilantro lime sour cream for adding on top!

In your bag

  • Rajas (roasted poblanos, bell peppers, & onions)
  • Refried black beans
  • Mole sauce
  • Saffron rice and beans
  • 6 All Souls corn tortillas
  • Cilantro-lime sour cream, salsa roja, and shredded Chihuahua cheese

At home

  • Nonstick cooking spray or oil
  • Aluminum foil-lined sheet tray
  • Microwave-safe bowl

How to Build Your Enchiladas:

Filling the Tortillas:

  1. Preheat your oven to 375F.
  2. Lightly grease your foil pan with nonstick spray or oil.
  3. Wrap tortillas in a damp paper towel and microwave in 10 second intervals until soft and pliable. Keep them wrapped in a towel to steam while you assemble!
  4. Lay a tortilla on a cutting board or plate. Spoon some refried beans & rajas (maybe some saffron rice & beans too?) in a horizontal line down the center of your tortilla. 
  5. Now roll it up, leaving the sides open! 
  6. Grab your tin and position it horizontally in front of you. Place your filled tortilla inside, positioned vertically
  7. Repeat steps 3-6 with the remaining tortillas. You should have 1 row of 6 enchiladas once they’re all filled up! 

Final Steps:

  1. Pour your mole all over. We like these super saucy, but you don’t have to use it all if you don’t want to! 
  2. Sprinkle the cheese evenly over the enchiladas, and place the container on your foil-lined sheet tray. 
  3. Pop in the oven for 20 minutes, or until cheese is melty.

The Saffron Rice & Beans

  1. Add to a microwave-safe bowl with a splash of water, cover with a damp paper towel, and microwave until warmed to your liking. 

Dollop salsa roja & cilantro-lime sour cream on top and enjoy!
