Roasted Butternut Squash & Sweet Potato Soup for Two

Prep time: 2-4 minutes microwave or 8-10 minutes stovetop

Butternut squash soup for dinner?? O-M-Gourd, yes please! A quart of velvety roasted butternut squash soup, lightly seasoned with 'quatre épices' (a French spice blend of pepper, clove, ginger & nutmeg). Served with spiced crème fraiche and candied spiced pepitas for a little cool, a little crunch, and a whole lot of fancy garnishing flair. Ready in just minutes on the stove! Soup-er easy, soup-er fast, soup-er delicious. (And yes, it can also be frozen for Future You.)

In your bag

  • Roasted butternut squash and sweet potato soup
  • Candied pepitas
  • Spiced creme fraiche

At home

  • Microwave-safe bowl and damp paper towel OR pot

1. Pour soup into a microwave-safe bowl, cover with a damp paper towel, and microwave until warmed to your liking! Alternatively, pour soup into a pot set over medium and heat for 8-10 minutes, stirring, until hot.

2. Add a splash of water or stock to adjust to desired consistency, and taste and season with S&P.

3. Swirl crème fraîche on top using a spoon, and top with pepitas!
