Roasted Corn & Chicken Chowder for Two

Prep time: 2-3 minutes microwave, 5-10 minutes stovetop

Soup season, here we come! This creamy, dreamy chowder is seasoned with onion, garlic, cumin, smoked paprika, cayenne, and coriander. With roasted red pepper, roasted potatoes, charred corn, and shredded chicken breast & thigh for the perfect combo of veggies + protein. Makes for a great light dinner or quick & easy lunch!

At home

  • Microwave safe bowl or medium pot

Microwave: Pour chowder into a microwave-safe bowl, cover with a damp paper towel, and microwave until warmed to your liking!

Stovetop: Pour chowder into a saucepan and warm over medium heat, stirring frequently, until hot & steamy. Add a splash of water or stock if the chowder is extra thick. Taste and season with S&P to your liking!
