Super Veggie Chili for Two
Prep time: 2-4 minutes microwave or 8-10 minutes oven
Our hearty veggie chili is chock-full of from-the-garden goodness: Plum tomatoes, charred zucchini, roasted sweet potatoes, red & green bell peppers, red onion, black beans, and sweet corn. Served with a hunk of decadent cheddar cornbread for dunking in. We've set you up with shredded cheddar for melting on top, but don't be shy about loading it up with any of your other favorite fixins! (Sour cream? Pickled jalapeños? Corn chips?) Go nuts!
