Sweet Chili Shrimp Lettuce Wraps

If you like wrapping presents, you’re gonna loooove tonight’s dinner. Because that’s basically what this DIY lettuce cup construction project is: You, wrapping a present to give your tastebuds. 

You’ve got springy, lime-zesty vermicelli, plump citrus-glazed shrimp, curry peanut sauce, and crunchy pickles and cashew crumble, all in a pretty, crisp leafy package. Of course, if you’re not a fan of wrapping, you can chop your lettuce and assemble this as a salad-style creation. Ok that’s a wrap on the wrap talk, time to dig in!

In your bag

  • Citrus-glazed shrimp
  • Bibb Lettuce
  • Lime leaf vermicelli
  • Yuzu pickles & shallot cashew crunch
  • Green papaya and mango slaw
  • Coconut curry peanut sauce & chili-lime vinaigrette

At home

  • Mixing bowl
  • Knife or kitchen shears (optional)

The Slaw and Chili-Lime Vinaigrette

  1. Add the slaw to a mixing bowl and drizzle chili-lime vinaigrette all over. Mix to incorporate everything!

The Shrimp Lettuce Wraps

  1. Remove leaves from the stem of the lettuce, keeping them intact and cup-like.
  2. Assembly time!
  3. Drop a little bundle of noodles into your lettuce cup. (Pro tip: Use a knife or kitchen shears to cut them into shorter, more manageable strands.)
  4. Spoon a few shrimp on top. If you’d like, pop the shrimp in the microwave to take the chill off.
  5. Add on a dollop of peanut sauce. If it’s looking a little thick, transfer it to a small bowl with a couple splashes of warm water and mix, or add sauce to a microwave-safe bowl and briefly microwave until sauce is at a more pourable consistency.
  6. Finish with a sprinkle of shallot cashew crumble and a few yuzu pickles. 
  7. Repeat for each lettuce cup! 

Plate up your wraps up with some slaw on the side and dig in!
