Mushroom Lo Mein for Two

Prep time: 3-5 minutes

f there’s one thing we know for sure–of all the many things there are to know in this world–it’s that mushrooms and fresh lo mein noodles are a match made in heaven. Especially when they’re partnered with a savory tamari-sesame oil vinaigrette. We might know a few other things too, but we’ll leave it at that… Fact check us after your first bite. ;P

In your bag

  • Lo mein noodles
  • Roasted mushrooms, sugar snap peas, bean sprouts & watercress
  • Sesame-hoisin vinaigrette
  • 2 crisp veggie egg rolls
  • 2 fortune cookies

At home

  • Microwave-safe bowl or non-stick pan
  • Foil-lined sheet tray for egg roll option #2

How to prep:

Stovetop option:

  1. Heat your non-stick pan on medium-low. Toss in your bowl, minus the vinaigrette, and heat for 2-3 minutes, stirring. Drizzle in vinaigrette & saute for a few more minutes.

Microwave option:

  1. Combine noodles and vinaigrette in your microwave-safe bowl and give it a toss. 
  2. Cover with a damp paper towel and microwave until warmed to your liking. 

The Egg Roll

Option #1: In the oven

  1. Preheat the oven to 400F. 
  2. Place your egg roll on your foil-lined sheet tray and pop in the oven for 5-7 minutes, until hot and crispy.

Option #2: In the air fryer

  1. Preheat your air fryer to 375F.
  2. Pop your egg roll in for 3-5 minutes, until hot and crispy.
