Zesty Meatballs with Poached Farro & Barley

Prep time: 18-20 minutes oven or 3-4 minutes microwave

NYATS. Aka, ‘not your average tomato sauce.’ We’ll tell ya why: We ditched the more familiar Italian flavors and tossed in ras el hanout (a Moroccan spice blend that includes cumin, coriander, turmeric, clove and nutmeg), as well as lemon & orange zest, paprika, & and little bitta honey. The result is, let's just say, magical & zesty (ma-zest-tical?). Set your saucy meatballs over that farro & barley, and for the love of garlic don’t forget the creamy dreamy labneh!

In your bag

  • 3 beef meatballs & zesty tomato sauce
  • Poached farro & barley with roasted mushrooms
  • Mixed greens & pomegranate vinaigrette
  • Cucumber & mint labneh

At home

  • Oven-safe casserole dish & aluminum foil
  • Mixing bowl
  • Microwave-safe bowl

The Meatballs

Oven option:

  1. Arrange the meatballs in an oven-safe casserole dish and pour your tomato sauce over the top. 
  2. Cover the dish tightly with aluminum foil, then pop it in a 375F oven for 18-20 minutes.
  3. Poke one of the meatballs with a knife to check warmth. If the blade feels warm, they’re ready! If not, pop the dish back in the oven for a few minutes. 

Microwave option:

  1. Add meatballs to a microwave-safe dish, pour tomato sauce over the top, cover with a damp paper towel, and heat until warmed through to your liking.

The Farro & Barley

  1. Transfer farro & barley to a microwave-safe bowl.
  2. Cover with a damp paper towel and heat for 2-3 minutes, or until warmed to your liking.

The Salad

  1. Add greens to your bowl and season with S&P to taste.
  2. Drizzle your vinaigrette all over and toss, toss, toss!

Plate your saucy meatballs alongside the farro and dollop some of that labneh on top. Set your salad on the side, and what are you waiting for?? Dig in!
