Beet + Ricotta Salata Bowl

Red + yellow beets and a lotta ricotta salata. A lotta ricotta salata, say that ten thymes fast! If you can successfully, you’ll have good luck for ten years. That’s how it works, the good luck ricotta salata. We could go on about ricotta salata all day, but we’ll spare you that cheesiness. Wait, but just so you know, ricotta salata is the cousin of ricotta, but salted, pressed, and aged. Ok, so with your lotta ricotta salata and beets you’ll find red quinoa, fennel, smoked almonds, Applefield Farm arugula from Stowe, MA, and a guajillo vinaigrette. We said we’d stop gabbing about ricotta salata but we can’t, it’s just so tasty. And fun to say. Ricotta salata time, peeps 🙂

What’s in your bag:

  • Your bowl 
  • Smoked almonds
  • Guajillo vinaigrette 
  • Ricotta salata

What you’ll need from home:

  • A fork!

How to prep:

  1. Remove the ramekins of smoked almonds, ricotta salata and guajillo vinaigrette from your bowl. 
  2. Sprinkle the almonds and ricotta salata on top of your bowl and drizzle that vinaigrette alllllll over.
  3. Enjoy!
