That’s how it works, the good luck ricotta salata. We could go on all day about ricotta salata (ricotta’s salted, pressed + aged cousin), but we’ll spare you that cheesiness. Ok, so with your lotta ricotta salata and beets you’ll find red quinoa, fennel, smoked almonds, arugula and a guajillo vinaigrette. We said we’d stop gabbing about ricotta salata but we can’t, it’s just so tasty. And fun to say. Ricotta salata time, peeps 🙂

How to prep:
- Remove the ramekins of smoked almonds, ricotta salata, and guajillo vinaigrette from your bowl.
- Sprinkle the almonds and ricotta salata on top of your bowl and drizzle that vinaigrette alllllll over.
