Cajun Chicken + Charred Corn Salad

Sometimes ya can’t help but throw some chicken on your salad to make it thaaaaat much more filling. And when you season that chicken with cajun spice, forget it. The salad is suddenly on another level – the level that gives us happy feet. Kinda like the happy feet we’d have if we were in New Orleans, home of Cajun cooking, dancing down Bourbon Street. But hey, if we can’t have happy feet in New Orleans, kudos to this salad for giving us happy feet in Boston 🙂

Tonight, the salad we’re topping with this cajun-spiced deliciousness highlights the beautiful local corn we’ve charred to smokey perfection. Add in cilantro + lime slaw, watercress, baby arugula, blistered peppers, pickled red onion and guac and you’ve got a Mardi Gras of deliciousness waiting on you. Let the good times roll!

-Mixing bowl

-Salt + Pepper


How to Prep:

  1. Toss everything in a large mixing bowl.
  2. Drizzle the vinaigrette all over and season with salt and pepper. 
  3. Toss, toss, toss!
