Cajun Chicken Salad

Sometimes ya can’t help but throw some chicken on your salad to make it thaaaaat much more filling. And when you season that chicken with cajun spice, forget it. The salad is suddenly on another level—the level that gives us happy feet. Kinda like the happy feet we’d have if we were in New Orleans, home of Cajun cooking, dancing down Bourbon Street. But hey, if we can’t have happy feet in New Orleans, kudos to this salad for giving us happy feet in Boston 🙂

Total prep time: 5 minutes 


What’s in your bag:

  • The salad of your cajun dreams
  • Pico de gallo

What you’ll need from home:

  • Aluminum foil-lined sheet tray
  • Salt + pepper

How to prep:

  1. Remove the chicken breast and place it on an aluminum foil-lined sheet tray. Reheat it in the oven for 5 minutes at 350F. Then put it back in the bowl with all its friends. 
  2. Drizzle the pico all over and season with salt + pep.
  3. Dig in!
