Caprese Salad

We did a similar caprese salad for a side dish a few weeks ago, and we were so happy with the quality of Farmer Ray’s tomatoes, that we decided to give the salad it’s own place on the menu this week. Tweaked a bit, this one is just as delicious, but better. We’ve added arugula and when arugula gets itself involved, it is instantly better. In our opinion. Marinated tomatoes, mozzarella, basil, good olive oil… these are just a few of our favorite things. Top it all off with some fresh basil, fresh arugula, a healthy drizzle of balsamic reduction, and you’ve got yourself a salad. This bowl is ready to go – simply toss or mix everything together, and get in there!

If you got olive + lemon braised chicken thighs:

You are smart people – we knew it.  Excellent choice. These thighs are most excellent. We have a thing for olives and lemons – like you’re talking a stroll in the Italian countryside – only you don’t have to leave home.  You’re welcome.  All you gotta do for these is broil them until they are crispy on top, and nice and hot inside. Arrange the thigh(s) on a sheet tray lined with aluminum foil, and broil on low for 7-10 minutes, till caramelized and heated through. Alternatively, you can microwave, but broiling is definitely recommended. Once it’s hot, plate it up on top of your caprese! That’s it. Beautiful. Enjoy!
