Carne Asada Tacos

OH man. You are in for a treat tonight. Taco Tuesday is always a hit, but this week, I think the team has outdone themselves. I am so proud of everyone 🙂 Mrs. Chips made a guest appearance and I think this is some of her finest work yet. The chips are like little pieces of crispy tortilla bliss, and with the salsa… my goodness. Let’s just say this: it’s very hard to get any work done at WECO if you’re hungry. So many delicious distractions, and they are all off limits until the end of the day! Oh, the anticipation. Good thing I’m the chef, and I am REQUIRED to make sure everything is up to the standards. Quality control is important. That’s my excuse. Grass-fed skirt steak from joyce farms and grain fed flank steak make for the perfect carne combo- it’s unreal. The fried rice is new, and I love it. Let me know what you think. Pickles, limes, tortillas, it’s all there. Prepare to commence taco festivities. Take a shot of mezcal for me! Get in there!

For the carne asada:

Two choices- sear in a pan, or broil. Both are great options. For big families, broiler may be the way to go. To broil, lay out the steak and veggies on a sheet tray lined with tinfoil, and broil for 2-3 minutes till everything is nice and hot. To sear in a pan, get a cast iron or stainless pan nice and hot, add just a splash of oil, and toss the steak and peppers in. Let them caramelize a bit, and once it’s hot, it’s ready!

For the fried rice:

Cotija in the fried rice??! Yes please. Get a big nonstick pan HOT hot over high heat, add a little butter or oil, and plop the rice right in there. Stir a bit to break up any big clumps (small clumps are good!), and let it fry until it’s crackling nicely. Give it a toss, let it fry for another 2-3 minutes, and then plate it up! Crispy is good- don’t be afraid of the fry! Whatever you do, don’t microwave it. Definitely warm it in a pan. 

For the tortillas:

Best way is to warm them over an open flame burner, for 5-10 seconds on each side, and stack them up so they stay warm. You can also warm them in a pan, or in the oven. Just get em hot!

Gigi didn’t mess around today. Not only are these salads delicious, they are also packed with nutritional goodness from chickpeas, watercress, and cilantro! Cilantro is great for digestion among many other benefits. Toss with the cilantro lime dressing, and prepare for nirvana 🙂
