Chicken + Black Bean Bowl

Chicken, rice, and beans. Gotta keep it simple sometimes, right? The cool thing about rice and beans is that they’ve been eaten all over the world since, like, the beginning of time. They actually contain ALL essential amino acids when combined. How cool is that? We’re jazzing up this dish with some chayote slaw and mango pepper salsa. Chayote, if you’ve never heard of it, is a funny looking vegetable similar to cucumber or squash. Look it up on Google, it’s look will make you laugh 🙂 Moral of the story here, the ingredients in this bowl are pretty darn cool – you’ll love it! 

Total prep time: 4 minutes (or 0 minutes)

 

What’s in your bag:

  • Chicken over saffron rice, black beans; chayote slaw
  • Mango pepper salsa 

What you’ll need from home:

  • Not a thing. A fork maybe, unless you want to eat with your hands. This is a no-judgment zone. 

How to prep:

Option 1: Hot. Remove the ramekins of salsa and the chayote slaw.  Pop the bowl into the microwave for 3-4 minutes. 

Option 2: Cold. Do nothing! 

Whatever option, just toss the slaw & salsa on top and either mix it up, or don’t! It’s a choose your destiny kind of thing 🙂
