Chicken + Black Bean Bowl

Third time, or fourth time, or however many times we’ve done this bowl… is the charm! Actually, it was also really delicious every other time. I think things get better and better the more we repeat them. Despite my reluctance to fall into a pattern, I do feel that there are some things that should just stick around and make an appearance every month or two. I am really curious to hear what you guys think of this idea, and what dishes or menu items you would like to see regularly in the “rotation”. I promise we will keep whipping up fun fresh and brand new offerings for ya, but we gotta please the crowd. I know the usual suspects- BBQ, lasagna, short ribs, etc. but I’m curious to hear about some of the unsung heroes that you can’t get off your mind. Drop me a line ([email protected]) and let me know! To be honest I probably won’t respond to your emails until like at least three days later (that’s just kind of where my life is at these days), but I really do wanna hear from you 🙂

Tonight, we’ve got some mojo marinated chicken breasts, perched atop saffron + paprika rice with black beans, grated + marinated chayote and baby kale, and a fresh mango salsa to top it all off. Remove the ramekin of salsa and pop the whole bowl in the microwave for 2-3 minutes! Once it’s hot, dump that salsa on there, slice up the chicken, and enjoy. Hot sauce is recommended- I’d got for Valentina on this, or maybe some sort of chipotle situation. Enjoy! <3 WECO
