We have to admit something. While our culinary team has tons of expertise in designing and cooking epic food (as we hope you can tell!), there are also some of us non-chef folk on the team who are newer to cooking. One person in particular ordered the tamales last time and actually attempted to eat the husks as part of her dinner. (She may actually be the person typing this right now.) So do us (me) a favor — don’t eat the husks! They are simply vessels that hold all the good stuff together in the cooking process. And good stuff there is indeed — creamed corn, sharp cheddar, mozzarella, hibiscus pickled red onion, salsa roja and dainty arugula and watercress. Get your tamale on, hold the husks!

- Optional: Steamer basket
How to prep:
Option 1: Steam! If you have a steamer basket, boil some water and use that bad boy to steam the tamales for 3-4 minutes until hot.
Option 2: Microwave. Wrap the tamales in a damp paper towel and microwave for 2-3 minutes until nice and hot.
Whichever option you choose, your next move will be to unwrap them and cover them with salsa roja and pickled onions. Dress the greens with some salsa too, and make a big delicious mess of it all! And then eat. Obviously.
