Cream of Mushroom Soup
So the first real, substantial snow has arrived, and all that has us thinking about is soup. Warm soup on a cold winter day? Never sounded better. And at this point, you should know how we feel about mushrooms, so mushroom soup? A dream come true. We started with a little mirepoix (carrots, celery, and onion all diced up) as a base, and worked from there. Fresh sliced shiitakes give it a shroomy flavor, spices and herbs for pizzazz, and of course, our favorite kitchen weapon, the immersion blender is involved. Enjoy with the Parmesan crumble crunch, and get to slurping!
Total prep time: 8-10 minutes

- Parmesan crumble
What you’ll need from home:
- A pot + spoon!
How to prep:
- Pop the pot on the stove and fill it with the soup.
- Heat on medium until warmed to your liking, stirring on occasion to distribute the heat evenly. About 8-10 minutes.
- Pour or spoon into a bowl.
- Top with the crumble and sluuuuuurp it up!
