Crunchy Summer Salad

We’re here for the crunchy things and that’s it. Well, we’re also here for the mojo vinaigrette. Plus the roasted peppers. Did we mention corn and squash too? Crap, we can’t decide, we love it all… but we do love the crunchy things first and foremost. If you don’t end up using all your crunchy things (which would be surprising since they’re so gosh darn tasty) just keep ‘em in your pocket. You might just need them ICOCE (In Case Of Crunchy Emergency, duh.) Ya know, when you’re eating a lame salad (not our salads, that’s for sure) and it needs a bit of somethin’-somethin’. Crunch it up, WECO-ers!

Total prep time: 0-5 minutes

What’s in your bag:

  • Crunchy things
  • Mojo vinaigrette
  • Shrimp (if you ordered them!)

What you’ll need from home:

  • Bowl
  • Tossy things
  • S+P

How to prep:

  1. Get out your bowl, remove the ramekins of crunchy things and vinaigrette, and flip in your summer salad!
  2. Season with S+P, top with said crunchy things, and drizzle with vinaigrette.
  3. Toss it up, peeps!

Eat your salad! Absolutely no need to heat. Just enjoy!

The Shrimp (if you ordered them!)

  1. Heat the shrimp in a saute pan with a tablespoon of water over medium for about 2-3 minutes or until warmed through.  
  2. Add to your salad!
