Curried Coconut Butternut Squash Soup with Poached Shrimp

Soup’s on, peeps! Diving head first into the cozy weather and into this soup, too. We knew we wanted to bring soup back ASAP, so then we threw around some ideas and landed on this beauty. The curry, coconut, and butternut are honestly enough to make it a meal, but the poached shrimp truly takes it to the next level. Get cookin’ and then get cozy with (we hope) your new favorite soup! What’s in your bag:

  1. Soup!
  2. Shrimp

What you’ll need from home:

  1. small saucepot
  2. something to stir with

How to Prep:

  1. Pour the soup into the pot.
  2. Heat on low until warm, stirring to keep from sticking.
  3. Add the shrimp to the soup (or don’t if that’s not your thing!).
  4. Serve in a bowl when hot.
