This bowl is absolutely jam packed with surprises. The base is a vadouvan curry spiced orzo (think mustard seeds, fenugreek, and coriander) with zucchini, summer squash, and paprika chickpeas. There’s some blistered peppers in there too, and can’t forget the feta and mint! It’s fun to get a little bit of everything in each bite, we might even recommend chopping the chicken up so you can really mix it all in there. We have two different methods tonight for reheating, the chicken thigh needs a little extra attention because if you microwaved it right in the bowl, it probably wouldn’t heat all the way through. Choose your fighter, microwave or oven, and go for it!
What’s in your bag:
- Your bowl
- Cherry tomato vinaigrette
- Feta + mint
What you’ll need from home:
- Aluminum foil-lined sheet tray or a microwave-safe plate
Total prep time: 10 minutes
The Chicken
Option 1: Remove chicken thigh from bowl, and place on an oiled aluminum foil-lined sheet tray. Cook for 10 minutes at 400F.
Option 2: Place chicken thigh on a plate and microwave for 2 – 2 ½ minutes until nice and hot.
The Bowl
- Remove feta and dressing from the bowl.
- Heat in the microwave for 2-3 minutes.
- Drizzle dressing over bowl and shake.
- Sprinkle feta + mint on top.
- Top with chicken thigh.
Easy peasy, lemon squeezy! And minimal clean up. Mix all of your veggies around and get the curried orzo all over them. Bowls for the win tonight!
