Curried Veggie + Cumin Rice Bowl

What’s better than a curried veggie + cumin rice bowl? Oh shoot, we know the answer to that! A curried veggie + cumin rice bowl made with zucchini + squash grown by our dear friend Farmer Ray down the road at Applefield Farm 🙂 He’s got all the goodies for us this time of year and we’ll take whatever we can get our hands on! We mixed his veggies up with bell pepper, sweet potato, black beans, paprika and a little cumin, of course. Kinda had to, since it’s in the name of the dish, right? Right. 

What’s in your bag:

  • Your bowl (made with zucchini + squash from Applefield Farm!)
  • Braised lamb (if you ordered it!)

What you’ll need from home:

  • A little s + p 🙂
  • A saute pan (if you ordered the lamb!)

Total prep time: 5 minutes

How to prep:

  1. Remove the lid from the bowl and take out the ramekin of feta + mint from your bowl.
  2. Microwave your bowl for 1-2 minutes.
  3. Top with your feta + mint.
  4. Enjoy!

The Lamb (if you ordered it!)

  1. Add some olive oil to a saute pan and heat over medium heat.
  2. Add lamb and saute for 3-5 minutes, stirring occasionally to prevent sticking.
  3. Remove from heat and add to your microwaved bowl!
