Curried Veggie + Cumin Rice Bowl

Y’ALL, we’ve got some Applefield Farm pumpkins in the mix tonight! Which is to say, Farmer Ray grew some pumpkins and we’re eating them in this curry 😀 How cool is that?! Speaking of pumpkins, T-1 month until Halloween… yippee! We’re mostly just excited because we’re probably gonna beg JP, our culinary content manager, to bring out the ‘ol Garfield costume again… Best time of year? YUUUUSSSSSSS. Anyways, along with pumpkin there’s tomatoes, sweet potato, black beans, corn, bell peppers and oooooodles of spices and herbs in your bowl tonight. Don’t sleep on the feta + mint, please. We hope you love your bowl, Fam!

What’s in your bag:

  • Your bowl 
  • Feta + mint
  • Braised lamb (if you ordered it!)

What you’ll need from home:

  • A little s + p 🙂
  • A saute pan (if you ordered the lamb!)

Total prep time: 5 minutes

How to prep:

  1. Remove the lid from the bowl and take out the ramekin of feta + mint from your bowl.
  2. Microwave your bowl for 1-2 minutes.
  3. Top with your feta + mint.
  4. Enjoy!
