Curry Cauliflower + Coconut Chicken

A new WECO recipe on a Wednesday, friends! We love a debut, and this one is flavor central. Joyce Farms pasture-raised chicken is the tender star of the show, braised with coconut. It’s the ideal complement to curry cauliflower and toasted orzo. Throw in some cherry tomatoes and kale and a heavy dose of champagne vinaigrette and you’ve got your new favorite grain bowl. Eat it hot, eat it cold, the choice is yours! Either way, the flavors will pop and make your day 🙂

Total prep time: 3 minutes

What’s in your bag:

  • A big ol’ bowl with braised coconut chicken, roasted cauliflower, orzo, cherry tomato + kale
  • Champagne vinaigrette

What you’ll need from home:

  • Not a single thing. Maybe a fork though.

How to prep:

Option 1: Hot. Remove the ramekin of dressing and pop the entire bowl into the microwave for 3 minutes or until warm.

Option 2: Cold. Do nothing! We love how orzo tastes cold.

Whatever option you pick, just drizzle that champagne vinaigrette all over and enjoy!
